Mate, if you've got an EA81 and your in perth, pretty much the only advice you'll be getting is to stick an EJ in it 
Let us know your problem, you'd be surprised about what you can solve on the forum with a bit of writing and some knowledge...

need help
start ute up go about one k down road then starte's to cough's and splaters if u dont have foot flat to floor or nock out of gear and foot flat to floor will stop if it stops very hard to start last time had to tow starte it if u get it to keep going it will run fine all day but under powered seem's like it has more power but somthing is holding it back

Sounds like you've got a vacuum leak, once it warms up and the choke goes off it runs majorly lean.
Check all your vacuum lines for splits or holes, and the plastic joiners for any cracks.
To help track it down you can try lightly spraying WD40 around the engine bay with the engine running, you'll hear the revs change if you spray near the leak.
Also could be the diaphragm in the distributor has deteriorated and is leaking.

caribie just had full rebuild carb man has played with it on car all is working fine . Have put wd40 overall vacuum lines got a nice clean motor revs didnt change tho , diaphraghm in distributor u talk about is that the one in the vacum advanceunit , it has a slight leak in it , have been told it's not enough to worry about
