Intermittent overheating

Last week my L series overheated because i was lazy and wasn't checking the water levels. Lucky i had just left Bennies and he was able to help me out. Anyway since then i've had trouble with the car overheating. It only happens when i'm cruising at low revs, e.g 60-80 in 4th, 80-100 in 5th. As soon as i shift down a gear e.g 60 in 3rd the temperature drops straight back down to normal. Same at 100 if i shift from 5th to 4th the temp drops to normal. This is while pulling a loaded trailer. Without the trailler it does the same thing, but the temps don't go any higher than when i'm using lo-range. I don't have a tacho so i can't say at what revs this is happening at.
Car is an L series with EJ25D, not sure exactly what radiator but i think its a liberty one.
I'm guessing it could be either the thermostat not working correctly, or there's an air pocket in the radiator. Any ideas?
