Weird! My guess would be to check out any wiring that may be near the clutch pedal or the clutch fork at the gearbox. I can't see any wiring that would be in the way.
The only other thing I could say is that the injectors need to be cleaned out - when you take a bit of load off the engine with the clutch some injectors may beable to drop off their flow rate while others may have a bit of junk in there that holds them open at a higher flow rate - the ECU may be trying to keep a steady idle by reducing the amount of fuel the injectors squirt - only to then bounce the idle.
I hope that's better than a puddle of mud - my theory on the matter anyway.
Cheers

Assuming the engine is in reasonable condition erratic idle usually means vacuum leaks. So make sure there are no vacuum leaks.
1. make sure your throttle body isn't loose.
2. vacuum lines are all connected and in good condition.
3. turbo piping is connected properly and in good condition.
The thing that gets me about this is the apparent low idle speed. Vacuum leaks will cause erratic idle but the general idle speed should increase not decrease. The engine will usually run lean because of unmetered air flow and want to stall when any load is put on it, this is assuming a big enough vacuum leak.
Whats the ignition timing set at? if it is retarded the idle speed will decrease and this can cause stalling issues when load is put on the engine.
Are there any other symptoms?
