fuel probs, tapping the carburetor, 85 L-series

Having problems with fuel supply and idle adjustment on 85 L-series wagon. I'm out bush, so especially keen to understand what's happening.
The idle point moves all over - I'm constantly adjusting it.
Sometimes I have loss of power and I have to do the routine of pulling the air filter off and tapping the carburetor above the ?needle valve. This is a pain, although I can do it pretty fast now.
Starting can be a problem; sometimes need to manually adjust the idle up, flood the system with trying to start, let it sit for a minute and then she'll start.
I've pulled the fuel pump out and tested it - almost a liter a minute, so it seems fine.
Any tips or suggestions greatly appreciated.
