advice sought - brumby + motorbike??

Hi all
Been looking around at 4WD utes, and i think a brumby might be exactly what i'm after. I've got a few questions which i'm hoping i might be able to get some help with here.
My main one is about towing. The reason i'm in the market for a ute is because i own an unregistered race motorbike (road, not trail) and i need some way of getting it around (including interstate). I was going to go short wheelbase pajero/trailer option, but a few of my mates have falcodore utes, there much better both around town and for long hauls. Will a brumby tray be large enough to carry a road bike? How much smaller is the tray than the aussie utes? I put my bike diagonally in my mates VS commodore ute, for example, and has about 30cm of space to the tailgate. It's a bit hard to turn up at a seller's place with an unregistered bike and ramp.

The reason i'm looking at a brumby is i want a ute with some off-road capabilities (wanted a hilux but their tray's are too high), so i'm also interested in a lift kit (so i can hit the stockton dunes etc). Would i need one for dunes/trails, and is there someone in Sydney who installs them at a reasonable price?
Finally, just a quick one. If it doesn't quite fit, is it legal (in NSW) to drive with the tailgate down or partially open and secured with a ratchet strap??
