Brumby engine problems

This is my first post as I have only just got my hands on a Brumby. I was given it after the following happened and the body and rest is i excellant condition so to good to say no to. The engine in my Brumby has thick oil/water mix coming out the carbi, it is also in the oil, rocker covers, when it happened there was a lot of smoke from the exhaust, but the engine didn't overheat as there was still half a rad fill of coolant when the car was stopped, I think the air filter filled up and stopped the engine. The spark plugs are all the same and don't show signs of water. I have a few questions and would love some feedback/help. 1 What do I look for? Or what tests can I do to find the cause? I was told it may only be a welsh plug in one of the heads or a blown head gasket. 2 I would like to keep it original with the EA81 engine as I am told they are very strong and reliable. What mod can I do to the EA81 engine to get more power? There is so much emission control gear connected to the carbi there must be something in removing all that? Any suggestions to improve. 3 If it is worthwhile and "easy" is there another engine that will bolt up to the original gearbox and transfer box as its a duel range.
